Today I made these delicious but healthy Banana oatmeal cookies. I used the recipe here with w/ a few adjustment. These cookies are vegan, dairy free,egg free, gluten free ( if you use gluten free oats) and use natural sugar from fruit.
Ingredients (I did not measure out exactly but added what I felt I needed based on taste):
2 Bananas (mashed)
~1.5 cups of Old fashion Oats (if you are gluten free use gf oats)
~4-5 Dates (chopped/broken up by hand)
~1 tbsp all natural apricot jam
~1 tsp cinnamon
salt to bring out flavor
Instructions
1. Preheat oven to 350 degrees
2. Combine ingredients in a large bowl
3. spoon out and flatten mixture on cookie sheet
4. Bake for 30 min or until lightly brown
You can add raisins, nuts, dark chocolate, peanut butter or anything your heart desires. If you only have banana and oats than you can work with that.
I have made these cookies over the past few years and I almost have it perfected. I really love that these cookies are guilt free. I plan to bake some at the beginning of the week and have them ready especially since I'm pregnant and feel like I'm hungry all the time this will be a great healthy go to snack for me and my family.
