3 meals w/ Chicken Breast

I started cooking quite a few meals since my husband and I got married It has been a lot of fun and I am still learning. =) Here are a few very simple(for busy schedules) dishes I created using boneless and skinless chicken breast.

smothered chicken & potatoes, carrots and onions seasoned in herbs served with rice and a baby spinach salad
a plate i made the next day from left overs


grilled chicken & broccoli w/ cheese and rice


shredded chicken quesadillas with lime, baby spinach, salsa, and cheese.  We used left over chicken 
to make chicken nachos (sorry i did not get a picture of the finish products)



future modifications for a healthier meal:
1. brown rice or quinoa instead of white rice
2. whole wheat tortillas instead of white flour
3. grill bell peppers and onions to go along with quesadillas
